More than one and a half thousand votes have already been received by Chelyabinsk products submitted to the national competition of regional food brands “Tastes of Russia”. One of the brands is Dubrovsky sausages, which are produced in the village of Dubrovka, Krasnoarmeisky district. For the third decade, sausages have been made in Dubrovka from chilled raw materials, which are grown here, at the fattening complex of the PKZ Dubrovsky.
On October 20, the third stage of the national contest "Tastes of Russia" started - the popular vote, which will last until November 7. During this period, you can go to the website of the Tastes of RUSSIA.rf contest and cast your vote for your favorite product or brand. To do this, select a region or enter the name of the brand itself in the search field. Under the terms of the competition, one person can choose three brands from different regions.
- The competition is held for the second year in a row, - says Deputy Minister of Agriculture of the Chelyabinsk region Inna Podshivalova. — 10 small and medium-sized enterprises of the Chelyabinsk region, which represent 14 brands, participate in it. These are honey, cheeses, sausages, MEAT processing, pickles, vegetable oil. This year there are amazing novelties, such as "Ural ham", "Miass restaurant in the bank", "Soups in the Urals". All of them are produced on local raw materials. Of the well-known and respected brands in the South Urals, these are Dubrovsky sausages. The mission of the competition is to help small and medium-sized agrarian businesses to enter the market, which can become drivers of rural growth, to develop agro-tourism. The breeding stud farm "Dubrovsky" has been known since Soviet times. We consider it important to preserve the production plant, which has a closed cycle - from the field to the counter. This ensures the social stability of the territory, and South Ural buyers - access to a wide range of high-quality meat products.
Up to three tons of sausages are produced daily at the PKZ Dubrovsky, as well as up to one and a half tons of cut meat and 600 kg of semi-finished meat products. The abundance of meat is based on the fattening of cattle, and begins with the cultivation of fodder here, on the fields of Dubrov. In the 70s of the last century, a fattening complex was created in Dubrovka, which still operates today. It is the third largest enterprise of its kind in the country. Every year, eight to ten thousand heads of cattle are fed from dairy farms in the Chelyabinsk region and neighboring regions.
- At the fattening complex, there are two tasks - to keep the livestock and get good weight gain, - says Timur Ziyatdinov, HEAD DOCTOR of the farm. - Our work is difficult, we collect calves from 50-60 farms. Each of them has a different immune background. It is necessary to improve the HEALTH of the calves, bring them to a certain weight - 190 kg - after which they enter the fattening stage, and there they already give up to a kilogram of daily weight gain. All procedures (vaccination, treatment) gobies are at the first stage. We take monthly calves and raise them for 11 months.
The products of PKZ "Dubrovsky" won gold and silver medals at the All-Russian Agro-Industrial Exhibition "Golden Autumn -2021". The secrets of the company's success lie in the stable quality of chilled raw materials and the invariability of the recipes for the main types of sausages and delicacies.
- We presented boiled sausage "Extra" to the competition "Tastes of Russia". The recipe for its production has remained unchanged since 1994. It was then that a processing plant based on imported technologies was created here, - said Nadezhda Shalbaeva, head of the processing shop at PKZ Dubrovsky LLC. - "Extra" is made from chilled raw meat, in it 70% is veal, and the rest is bacon, spices, SALT, moisture.
The quality of raw materials determines the taste of Dubrovskaya sausage. Three days pass from the slaughter of livestock to the moment when the finished product arrives on the shelves. Chilled meat, obtained according to a special formula for fattening cattle, comes to production in the right condition, which makes it possible to make a tasty, high-quality product. The same recipes are used at the PKZ "Dubrovsky" for the production of delicacies, sausages "Braunschweigskaya", "Austrian bread", sausages "Extra" and branded sausages.
Products under the Dubrovka brand can be purchased at 19 branded stores in Chelyabinsk and the Chelyabinsk region. For the New Year's table, the manufacturer decided to please the people of South Urals with a novelty - a dry-cured beef delicacy.
