Raw wild meat may contain helminths (parasitic worms), which are a source of trichinosis, a dangerous disease for humans. The main source of infection for humans is unheat-treated bear and wild boar meat. In order to kill the larvae of dangerous worms during cooking, it is necessary to cook the meat for 3-4 hours. Salting and smoking meat and lard does not kill Trichinella, since the muscle layers may contain a large number of larvae of this helminth. At low temperatures, worm larvae also remain in meat for 2 months to 1 year.

The ROSSELKHOZNADZOR Office issued a warning to the restaurant. Information about the identified violations was sent to the Office of Rospotrebnadzor for the Tyumen Region, as well as to the Institute of Regional Pathology for information.
