USA: FSIS releases new Salmonella guidance

FSIS has updated the document in response to comments on previous guidance. Updates include:

addition of current peer-reviewed scientific references related to ante-mortem control, slaughter of pigs, processing of pork cuts and minced pork products;

information on ante-mortem control, including on-farm rearing, integrated interventions, transportation and ante-mortem housing;

recommendations on best practices for the control of pork production, including control of the processing and packaging of pork cuts and minced pork products.

FSIS has published translations of nine industry guidance documents. The documents have been translated into one or more languages, depending on the target audience of each specific guidance document: Arabic, Vietnamese, Chinese and Spanish. These guidelines are not new, but they have been translated as one of the FSIS initiatives to reduce barriers to entry for small and very small business owners and operators, and to bring equity to marginalized and underrepresented communities.
