Especially careful should be people with chronic diseases of the gastrointestinal tract, atherosclerosis and diabetes.
“Salads often include meat, such as chicken or beef, mushrooms, and eggs. All these products are digested for a long time, and the fat contained in mayonnaise slows down this process even more, ”says Anna Basova, a nutritionist, HEAD of the department for organizing clinical nutrition at the Research Institute for Children of the Moscow Region.
To avoid such an overload, it is better to use one type of meat. If the main dish is beef, then salads are best done with beef, if chicken - with chicken.
Dietitian, candidate of medical sciences Daria Rusakova warns that the combination of fatty meat, alcohol and sugary drinks is dangerous for the liver and pancreas, although fats on the festive table are indispensable in themselves, as they prevent the rapid absorption of alcohol. To reduce the burden on the body, it is better to bake meat rather than fry, and also eat more fruits and vegetables.
In addition, you should not prepare salads in advance, the expert advises. “It is desirable that the snacks are light - after all, this is a nightly dinner. On the afternoon of December 31, you should not starve, it is better to have a full meal, and just to celebrate the New Year, leave light snacks, such as fish, shrimp. They will not lose their attractiveness, unlike mayonnaise salads. The most dangerous thing about such salads is that people can start preparing them a few days in advance in order to free up time before the New Year. But it’s better in this case not to cook at all, so as not to get poisoned, ”she explains.
Doctor-therapist, nutritionist, candidate of medical sciences Olga Grigoryan believes that you need to be careful even with traditional dishes - Russian salad and herring under a fur coat.

Potatoes, beets, carrots are high-carbohydrate foods, they will lead to a rapid rise in blood glucose levels.
