Cherkizovo Group: 10 facts about jamon

1) Jamon is a back pork leg (ham), salted and dried for a long time. This product has existed for about two millennia and is a recognized masterpiece of the national cuisine of Spain.

2) There are two main types of delicacy. Iberico jamon (iberico) is made from a breed of rare black pigs, jamon serrano (serrano) - from a ham of white pigs. The PIT-Product plant in Sinyavino (Leningrad region), which is part of the Cherkizovo Group, is the only certified producer of serrano ham outside Europe.

3) PIT-Product has been producing jamon serrano since 2016 thanks to cooperation with the Spanish company Casademont. 

4) In 2022, 28 thousand feet of jamon were salted at the plant. 

5) Pork is supplied to PIT-Product from the sites of the Cherkizovo Group located in the Penza, Tambov, Voronezh, Lipetsk and Oryol regions.

6) In the Middle Ages, jamon began to be salted and dried in cellars with the onset of winter, and with the change of seasons, the drying temperature gradually increased. The same process is reproduced today, only it takes place under the carefully controlled conditions of modern production.

7) At the enterprise, the product matures on average from 7 months to 1.5 years. The aging cycle is counted from the moment of loading the climatic chamber and can include up to 20 stages. 

8) Jamon fully meets the principles of a healthy diet: it contains the entire spectrum of essential amino acids, B vitamins, iron, zinc. In addition, there are no artificial additives in the product. For the manufacture of the delicacy, only fresh ham and SALT are used.

 9) "PIT-Product" produces jamon in two formats - cutting and whole leg. According to current serrano regulations, a raw ham should initially weigh about 12 kg.  

10) Jamon is served with fresh bread, olives, vegetables. But in fact, according to Cherkizovo experts, this MEAT delicacy goes best with melon.
