A unique technology for the Russian market – cold pasteurization
AlphaChef has introduced HPP (high pressure processing) technology — a cold pasteurization method that was previously almost never used in Russian food production, according to the website of the Ministry of Investment, Industry and Science of the Moscow Region. Thanks to the new equipment, ready-made dishes retain their taste, freshness and useful properties for up to 90 days without adding preservatives and colorants.
The company produces about 150 types of dishes, including Russian cuisine, original recipes and modern gastronomic solutions. All products are packaged in special formats - pasta-box and skin-plate, which ensure the preservation of organoleptics.

As noted by Ekaterina Zinovieva, Deputy Prime Minister — Minister of Investments, Industry and Science of the Moscow Region, the launch of the enterprise cost 4.5 billion rubles. The plant is completely autonomous: it has its own water treatment, cooling and biological purification systems. The annual capacity is about 75 million servings of ready meals.
According to Dmitry Usov, the company's CEO, the potential of HPP technology allows for the production of both classic food with a rich taste, as well as functional or dietary food , thanks to the ability to preserve vitamins and beneficial properties.
“Just imagine, you bought ready-made borscht in the store and you can reheat it for several months, just taking it out of the refrigerator, and it will be as if it were just made from scratch – this is a revolution for our understanding of ready-made food!” Dmitry noted.
