Czech dairy company MADETA launches new CHEESE FACTORY

GEA commissions a new cheese production plant for Madeta in the Czech Republic.

The new plant, which employs 150 people, can process up to 400,000 liters of MILK per day, twice the capacity of the old plant.

The new plant in Plana is one of four production facilities operated by Madeta, the country's largest dairy group. The plant produces up to 42 tons of hard and semi-hard cheeses daily, including Maasdam, Emmental, Edam, Gouda and Tilsit. The new manufacturing facilities allow the company to maximize production, maintain high quality standards and respond more quickly to changing market needs.

GEA said the updated technologies and manufacturing methods offer the opportunity to improve efficiency, productivity and process safety. GEA says it was also able to integrate an automation system into the technology, provide recipe control for the entire cheese line, and provide an interface to ERP.

GEA supplied a new hygienic starter system and CIP system for the entire cheese site. The whey processing line was supplied by GEA in the Czech Republic. The process includes double pasteurization, including one new line including whey clarification and cream separation, and one existing line that has been upgraded. Existing separators were reused. GEA Refrigeration Technologies supplied a 500 kW NH3 heat pump and optimized the existing cooling system for the new cheese plant.

Automation is provided by the GEA Codex software, which includes both the GEA master system and the dynamic recipe system, giving you complete control over the cheese making process. The GEA Master Recipe includes all elements of the production line, including specifications for adding rennet, starter, rinse water, dye, and calcium chloride. The Planna GEA system allows the master recipe to be modified to accommodate variations in protein/fat ratios in raw milk. All data is recorded by the GEA system and can be analyzed using Office tools, making the cheese making process more accurate.

The new Madeta plant in Plana is designed to process up to 400,000 liters of milk per day, but if necessary, its capacity can be increased to 600,000 liters per day.
