
Participants' products were evaluated by experts from regulatory and certifying bodies, Ural State University, as well as commodity specialists from large retail chains and technologists of enterprises.
- A large number of experts in the jury and its diversity confirm the objectivity of the results. For sausages and MEAT delicacies, appearance, texture, smell and taste were taken into account. Thus, the jury awarded 57.14 points out of the maximum 58 to the Salchichon raw sausage from Sibagro. This is one of the best indicators of the festival, - explains the chairman of the organizing committee, Lyudmila Rasova.
– “Salchichon” and “Chorizo” from our own raw materials and according to our recipe, we started producing in 2021. Today, on average, we produce more than one ton of these types of sausages alone per day. In two years, they have become a bestseller in our branded retail and in retail chains in the Sverdlovsk region - Lenta, Monetka, Kirovsky. Moreover, for sale in supermarkets, we have developed a mini-format - 160 grams each, which made sausages more accessible to an even larger circle of buyers, - says Roman Khairulin, DIRECTOR of the Ural Meat Processing Plant.
As a result of the festival, the meat processing plant received a two-year right to place the corresponding sign on product packaging. A gold medal confirming high quality will soon appear on:
- raw smoked sausages "Salchichon" and "Chorizo", which are made at the meat processing plant for 15 days. During this time, they ripen and acquire their unique taste and aroma. Due to the coarser grinding of meat and the addition of spices, the effect of handmade sausage is obtained,
- semi-smoked sausage "Krakow" GOST, made from selected beef and pork with the addition of bacon, garlic and spices in strict accordance with the state standard,
- sausages "Bavarian". According to the recipe, "Russian" cheese is added to them, which melts during cooking and emphasizes the delicate taste of sausages.
Sibagro is an agro-industrial federal company specializing in the production of pork, sausages, delicacies, chicken and eggs.
