MPK "Reftinsky" preserves the traditions of the Talitsky meat processing plant

In the village of Troitsky, the production of products under the famous Myasodar brand is developing.

MK-Ural continues a series of materials about the Reftinskaya poultry farm , which celebrates its 40th anniversary this year. We have already said that the company, in addition to the production and processing of poultry MEAT, is also developing other agro-industrial areas. Among them is the production of products from pork and beef. The Reftinsky meat processing complex, located in the village of Troitsky, Talitsky urban district, is responsible for this direction. it is here that products are produced under the famous Myasodar brand.

The meat processing complex as part of the Reftinskaya poultry farm appeared nine years ago, but the production site itself in the village of Troitsky, like the main enterprise, has a rich history that dates back to the middle of the last century. The products of the Talitsky Meat Processing Plant have always been known outside the native region.


In 2012, Reftinskaya acquired production facilities. The site became officially known as the Reftinsky Meat Processing Complex. At the same time, the new owner approached the heritage carefully. The product line, beloved by many generations of the Urals, was preserved to the maximum. A few years ago, it was decided to revive the famous Myasodar brand.

Fulfillment of the set tasks

We asked Larisa Tsyganova, DIRECTOR of the Reftinsky MPK, to sum up the results of 2021.

“The General Director of the Reftinskaya Poultry Farm, Alexander Zasypkin, set the task of efficient use of resources, maintaining production volumes and, of course, maintaining the workforce,” says Larisa Vasilievna. “I can confidently say that we have achieved our goals. The fall didn't happen. On the contrary, there is a steady growth.”

Separately, the task was set to develop a product line from the main raw material for Reftinskaya, that is, from chicken meat.

“The processing of various raw materials requires compliance with certain sanitary rules,” says Larisa Tsyganova. - It is necessary to breed shifts working with pork and chicken. Our capabilities allow us to do this.”

Like the entire Reftinskaya poultry farm, MPK adheres to the trend for the production of products of deep processing, which allows the buyer to save time on cooking. Semi-finished products for stewing and pilaf have already been put on sale. However, there is an offer for those who prefer to cook for themselves. This is, for example, minced chicken for stuffing peppers. In addition, portioned steaks from red and white poultry meat are being prepared for launch. This product has already been approved by the tasting committee of the poultry farm and should go on sale next year.

Own raw materials

Today, the products of the MPK "Reftinsky" are represented in almost all municipalities of the Sverdlovsk region and even the Tyumen region. The expansion of the client base is facilitated by active work with the distributor. Products under the Myasodar brand are presented in Reftinsky branded stores.

In addition to retail outlets, the MPK works with kindergartens and schools in the Talitsky, Sukholozhsky, Irbitsky, Tugulymsky, Bogdanovichsky, Kamyshlovsky and Pyshminsky districts. For many years, most schools have been receiving meat raw materials (high-grade beef, minced meat, goulash) from the production site in the Troitsky village.

How does the IPC manage to maintain and improve its position? The site has a number of competitive advantages. This is, for example, the presence of a full production cycle. The slaughter is carried out directly on the territory of the IPC, which means that the meat is always fresh.

The production uses, among other things, cattle meat from the livestock complex in the village of Krasnoarmeisky, Asbestovsky urban district, which is also part of the structure of the Reftinskaya poultry farm. Own beef of the highest grade is used, for example, in the production of Moskovskaya sausage.

The main thing is people

The main competitive advantage is a professional workforce. Now 131 employees work at the IPC. According to Larisa Tsyganova, the production site manages to maintain an optimal balance between experienced employees who have been working since the time of the Talitsky Meat Processing Plant and new employees.

We begin our acquaintance with the workforce with the HEAD of production, Natalya Ermakova, and the chief technologist, Dmitry Muchkin, who gave us a tour of the production facilities.

“Natalya Vladimirovna is responsible not only for the production process, but also for organizing the participation of MPK employees in the events held by the administration of the Troitsky village and the Talitsky urban district,” Larisa Tsyganova introduces her colleagues. – Dmitry Mikhailovich got a difficult task: to keep the recipes developed over decades and at the same time find an opportunity to add something new. I can say that our technologist is successfully coping with the task.”

The production process begins with slaughter, after which the carcasses are deboned. The work of deboners is perhaps the most exciting process: by performing seemingly familiar movements with deboning knives, the workers cleanly separate the meat from the bones in a matter of minutes. On the day of our visit, Alexander Golovyrskikh and Nikolai Sidorov are doing this work. Alexander has been working for the MPK since 1995, Nikolay - since 2007. Both deboners participated in the inter-regional competition of professional skills, held in the Kurgan region.

Extensive experience at the IPC and minced meat compilers Vyacheslav Leshukov, Alexander Shtanko and Dmitry Kramnoy, who also came to the enterprise in 2007. Despite the fact that the preparation of minced meat is carried out in special equipment called a cutter, great activity and increased attention are required from the compiler in order to obtain minced meat of the desired consistency.

The finished product acquires after heat treatment. This process is carried out in four Mauting furnaces under the control of Andrey Lyzhin, an apparatchik.

Finished products are sent for cooling and packaging, and then for storage and sale. Now the MPK is repairing the premises of the warehouse-refrigerator. Overhaul of the chambers with the replacement of doors and cooling units allows you to store products and raw materials in the appropriate temperature conditions.

The continuity of generations

The stable operation of the IPC also largely depends on support services. Without them, the operation of the enterprise would be impossible. These are, for example, mechanical and transport services. In 2021, on the Day of the Worker of Agriculture and Processing Industry, mechanical engineer Anatoly Andreev was awarded a letter of thanks from the Reftinskaya poultry farm, and Sergey Shchukin, the foreman of the integrated repair and maintenance team, became the winner of the Best in Profession contest organized by the Talitsky Department of the Agroindustrial Complex.

The longest work experience is with Lyudmila Meisinger, a launderer and workwear repairer. Lyudmila Nikolaevna came to the Talitsky Meat Processing Plant back in 1981, having worked for 40 years as a livestock fighter and weigher.

Since 1993 Sergey Kharlov has been working as a loader. Sergey Viktorovich found those times when horses were kept on the territory of the plant for the transportation of raw materials.

The transfer of employees of venerable age to other, less difficult work is part of the corporate policy of the IPC and the entire Reftinskaya poultry farm. To keep veterans, they are given the opportunity to learn a new profession. In addition, employees of pre-retirement age are given the opportunity to receive sanatorium treatment.

Another direction of the personnel policy of the Reftinskaya poultry farm is the training of specialists with higher education. Current employees (in absentia) and their children (in person) can receive a diploma at the Ural Agrarian University, where targeted recruitment is carried out. The IPC expects that among the targeted individuals there will be those who want to work in the field of meat processing.

In addition to USAU, the MPC cooperates with colleges and technical schools.

“This year we had three students from the Talitsky Forestry College,” says Larisa Tsyganova. “It wasn't an internship, it was their desire to get to know the production process. Previously, a student from a Tyumen college had an internship with us, now he is an employee of our enterprise.”

Anticipate the client's desire

Another component of success is attention to the buyer and his preferences. One of the manifestations of the client-oriented approach is the participation of the IPC "Reftinsky" in agricultural fairs, which are held in Talitsa twice a year.

“We organize a mini-cafe at the fair, decorated using the Myasodar logo, we cook shish kebabs right in front of the participants so that they can appreciate the type of meat products still raw,” says Larisa Tsyganova. “In addition to the fair, we also participate in other events in Talitsa and the Troitsky village.”

When the Reftinskaya poultry farm acquired the Talitsky meat processing plant, many residents of the Sverdlovsk region feared that branded sausages, Vostochny manti, Derevenskie and Kargopolskie cutlets, Throne and Pokrovskie dumplings would disappear from the shelves. However, all these names can still be found in stores. The revival of the Myasodar brand is also a step that is designed to emphasize adherence to traditions.

At the same time, the MPK also solves the problem of expanding the product line.

“On the one hand, our customers are very conservative,” says Larisa Tsyganova. On the other hand, preferences tend to change. Therefore, we have to approach the launch of new products for sale very carefully, giving the opportunity to evaluate and try the product.”

One of the latest innovations is the “Original” roll, made from white and red poultry meat. Due to its contrasting appearance, it has gained great popularity. It belongs to the category of eco-products.

Assorted “Homemade” belongs to the same type, although at first glance this is the complete opposite of the “Original” roll. The assortment is made from pork and beef meat and flavored with pepper. However, both products are united by the fact that their basis is high quality natural raw materials.

In the near future, a new product, dry-cured brisket roll, may appear on the buyers' judgment. It is expected that the test batch will be ready in mid-January. It will be possible to buy a novelty in the Reftinsky chain of branded stores. Depending on how much the product is in demand, a decision will be made on its further production.

In general, the employees of the IPC Reftinsky look at 2022 with optimism.

“Now we feel good support under our feet and hope that next year we will move forward,” says Larisa Tsyganova. - The management of the Reftinskaya poultry farm will set specific tasks in the near future. However, whatever they are, all our activities will be aimed at continuing to delight our customers with those products that have been enjoying well-deserved popularity for more than a decade.”
