The scientific work of a young scientist Veronika Belyaevskaya was devoted to the development of a technology for combined MEAT products for gero-dietary nutrition and has already attracted the interest of food enterprises

The Saratov State Agrarian University hosted the finals of the All-Russian competition for the best scientific work among students, graduate students and young scientists of higher educational institutions of the Ministry of Agriculture of RUSSIA in the nomination "Technology for processing agricultural products".

Representatives of 22 agricultural universities claimed the victory, the research project of Veronika Belyaevskaya, a student of the magistracy of the biotechnological faculty of the Don State Agrarian University, was recognized as the best.

The scientific work of the young scientist is devoted to the development of the technology of combined meat products for gero-dietary nutrition.

When creating a functional product intended for the full and rational nutrition of the elderly, turkey meat, grape seed FLOUR, pea and pumpkin seeds were used. According to research results, the use of these components in the recipe improves the consumer properties of meat products, organoleptic characteristics and the quality of semi-finished meat products.

“Turkey is traditionally a dietary meat due to its low fat content. Seeds (stones) of grapes contain a wide range of essential and biologically active substances necessary for the full functioning of the human body. The same applies to peas and pumpkin,” says Veronika Belyaevskaya, emphasizing not only the beneficial properties, but also the excellent taste of her development.

According to the scientific adviser of the contestant, Associate Professor of the Department of Food Technologies and Commodity Science of the Don State Agrarian University Pavel Kobylyatsky, the new product is aimed not only at the elderly and elderly, but can be more widely used in dietetics.

“Among its characteristics are a low carbohydrate content, a large amount of protein and vitamins, as well as immunomodulators that increase the body's resistance to various diseases. Thus, it can be recommended to almost all categories of consumers,” he notes.

Veronika Belyaevskaya has been creating food products using ingredients that increase biological and nutritional value and have a therapeutic and prophylactic effect for several years.

The developments of the young scientist were presented as part of the Don Innovations Laboratory project and became laureates of various competitions. The innovative technology of meat products was highly appreciated by industry experts at the All-Russian competition "UMNIK-Cherkizovo 2021", being among the finalists out of 168 competitive applications.

Currently, representatives of the food industry are showing interest in the project - meat products intended for the nutrition of the elderly are practically not produced in Russia.
