In this video, we will lead a master class and prepare the national Armenian dish Hapama - a baked pumpkin stuffed with rice, dried fruits and honey with cinnamon. This dish is a symbol of abundance and is often served on the festive table for newlyweds.
To prepare this dish, you need to take a pumpkin, which has a pear-shaped shape, convenient for baking.
The head of the pumpkin is cut off from the top, after which the pulp and seeds are taken from the inside.
After removing the pulp, the inside of the pumpkin is smeared with butter and honey so that the rice that is laid in the future is juicier.
Various dried fruits and nuts are cut into small pieces in a plate with slightly salted and stewed rice. While this exciting process is going on, our young heroine, who has her birthday today, read poems in Armenian, including her own.
When the mixture is mixed, it is necessary to stuff the pumpkin with it. A mixture of rice and dried fruits is laid in layers interspersed with honey, after which it is tightly packed. After stuffing, the outer part of the pumpkin is covered with a thick layer of butter and wrapped in foil. We put in the oven, heated to a temperature of 200 degrees, for 40-60 minutes. 10 minutes before the end of cooking, the foil is removed so that the sides of the pumpkin are slightly baked.
Taking it out of the oven, the pumpkin is cut into slices, which is why it opens in the form of a rose. This dish is common, so each slice is placed on a separate plate.
