
January 14, MINSK. Camembert cheese will be produced in the Vileika region in 2023. Yelena Vasilevskaya, Deputy Chairman of the Economy Committee of the Minsk Oblast Executive Committee, told journalists today, BelTA has learned.
"The innovative project is being implemented at the Vileika production site of Molodechno Dairy Plant OJSC. Camembert cheese with white mold will be produced here. Similar imported products are characterized by high prices in our stores, so the cheese will become in demand both in Belarus and in RUSSIA, where the market is also not saturated with similar products," said Elena Vasilevskaya.
The first batch of cheese is planned to be released in the first quarter of 2023, after which its production will increase to 3 tons per day.
The total funding for the project will be more than Br12 million. The plant in Vileyka will create 15 jobs.
The uniqueness of the cheese lies in the fact that noble mold cultures have a very high enzymatic activity. If the main MILK protein casein is absorbed by the body by 75-80%, then in cheese with mold this figure reaches 98-99%.
