Scientists have created recipes for meat delicacies for representatives of different socioeconomic classes.

Yulia Zabalueva, Associate Professor of the Department of Biotechnology of Food Products from Plant and Animal Raw Materials at Moscow State University of Technology and Management, presented recipe models for MEAT delicacies in line with current nutritional trends and taking into account the socioeconomic status of the population. The work was completed under state contract No. 075-03-2023-037/7 dated December 26, 2023, for the provision of public services (Reg. No. NIOKTR 123121300085-4 under the Supplementary Agreement) and is dedicated to promoting a healthy lifestyle, according to the report.

"The quality of the population's nutrition is directly linked to their socioeconomic status and invariably impacts their ability to work, their overall HEALTH , and their life expectancy. This paper describes the development of recipe models for dry-cured and smoked sausages, developed based on an assessment of the actual nutritional status of various population groups and on the human body's energy and nutrient requirements. it is expected that incorporating these products into diets based on the population's status will help identify ways to effectively provide Russians with sufficient nutrients, including essential ones, necessary for maintaining and supporting national health," commented Yulia Zabalueva.

The experts also presented research related to the production of organic lamb enriched with beneficial elements and the impact of feed additives on the final quality of fish products.
