were invited as experts at this difficult but tasty competition . Traditionally, Frank Grace from Virginia was present as an expert, as well as the president of the Angus Association in the UK, Mr. Stovald Angus. The beef from which the steaks were prepared was produced in Kazakhstan. As parts of the carcass for cooking steaks, the following were used: rib eye, or “king of steaks” (part of beef from the thick edge of the dorsal-rib part of the carcass) and part of the sternum.
In addition to steaks, smoked smoker meat was cooked within 12 hours . For this, it is important that the temperature is maintained at 120 degrees throughout the entire time.
In addition, five breeds of lamb were submitted to the competition, including those that are grown near the competition site.
First, the experts selected the parts of the lamb that will go to the competition. After that, the meat goes to the grill and roasted on birch charcoal at a temperature of 220-250 degrees to medium well. The chef prefers birch coals, as they keep the temperature well and do not give bitterness. After frying the meat, it is enough to SALT and pepper. The competition is designed to evaluate the quality of lamb meat from the regions of Kazakhstan.
According to the results of a blind tasting, the lamb of the Dorper cross and the Kazakh fine-fleeced lamb from the Alakol-Agro enterprise, which conducts breeding work to breed sheep adapted to the Kazakh climate and excellent taste, became the winner.
