Damate improves quality control of meat products

Damate strengthens the quality control of its meat products. To this end, the company installed modern equipment worth 10 million rubles in its own laboratory.

The Damate group of companies, on its own initiative, improves the quality control of its meat products. To this end, the company installed new modern equipment in the food safety laboratory. The facility is located in the Penza region and is part of the turkey production complex. Investments in equipment from the world leader in the production of high-precision analytical solutions amounted to 10 million rubles.

The equipment is a special food analyzer that, using innovative near-infrared light wave propagation technology, penetrates the meat sample and provides accurate results in just 50 seconds. 

The new equipment makes it possible to determine the qualitative, chemical and technological indicators of meat such as fat, protein, moisture, salt and analyzes a number of other parameters in the composition of the product. The analyzer makes it possible to quickly carry out a whole series of studies of both raw materials (meat, minced meat, turkey trimmings) and finished products (meat semi-finished products, products of deep processing). 

“Based on the data obtained, Damate technologists monitor and promptly respond to any deviations in the production process in real time. For example, they optimize recipes, adjust the content of salt and fat in the product, - said Daniil Gubanov, head of the Damate Centralized Laboratory. - As a result of the installation of new equipment, the time for conducting research and obtaining results has been significantly reduced - from several hours to several minutes. It is important to note that this made it possible to put the research on stream and subject not selective batches to thorough analysis, but each batch of raw materials and products at all stages of production.” 

Thus, the company guarantees the consumer the high quality of the produced meat semi-finished products and delicacies, and also provides all the necessary standards for the production of products.

The Meat Analyzer is equipped with a unique Artificial Neural Network (ANN) calibration that enables automatic self-tuning, thereby eliminating the risks associated with manual tuning. The analyzer calibration system was developed using the results of approximately 20,000 analyzes collected worldwide from more than 1,000 dedicated meat analyzers previously installed worldwide since 1989. Digital services and artificial intelligence make it possible to integrate the received data into analytical tables, on the basis of which the laboratory specialists build high-quality monitoring. 

To date, 14 Damate laboratories operate in the Penza and Rostov regions, including veterinary diagnostic, industrial microbiological and physical and chemical laboratories for food production, chemical and technological laboratories for feed production, analytical testing laboratory centers, laboratories of local treatment facilities. More than 1.5 thousand units of equipment are installed in them, which allows more than 550 different types of research to be carried out. The total capacity of Damate laboratories is designed to carry out over 2.5 million analyzes, tests and studies per year. This volume is comparable to the scale of work of large federal testing centers.

In the Rostov region, Damate restarted the complexes for the production of turkey and industrial production of duck meat.

In the North Caucasian Federal District, "Damate" develops the production of lamb. As part of the project, the construction of breeding and fattening yards continues, the reconstruction of the meat processing plant is being completed. Damate was the first in Russia to start working with sheep farms on a contract farming model. The service company created for this purpose provides consulting and resource support to partner farms. 

The bank of agricultural land of the company has more than 99 thousand hectares in the regions of presence, of which land in cultivation - more than 77 thousand hectares.
