Three Holiday Egg Nog Recipes: Traditional, Chocolate, Eggless

Eggnog was born in the 16th century in Scotland. Traditionally, it was made for Christmas with just four ingredients: eggs, dark ale, honey, and spices.

Today, there are many recipes for making this popular holiday drink (dozens, if not hundreds), but we will focus on three. Choose to your taste!
Traditional eg-leg recipe Ingredients: 4 egg yolks;
1/2 cup SUGAR;
500 ml of MILK;
1 glass of heavy cream (from 33%);
100 ml whiskey;
1/2 teaspoon vanilla sugar;
1/2 teaspoon nutmeg.
How to cook: Whisk the yolks and sugar in a medium bowl until light creamy.
In a small saucepan, combine cream, milk, nutmeg and vanilla sugar. Heat the mixture over medium heat, stirring constantly. Bring it almost to a boil.
Add a large spoonful of hot milk to the egg mixture, whisking vigorously. Repeat adding hot milk one tablespoon at a time to simmer the egg yolks.
Once most of the milk has been added to the eggs, pour the mixture back into the saucepan on the stove.
Whisk constantly for a few minutes until the mixture thickens slightly. As it cools, it will get even thicker.
Remove from heat and add whiskey.
Pour the eggnog into a pitcher or other container and cover with plastic wrap.
Place in refrigerator to cool. If you want a thinner consistency, you can add the whole mixture to a blender with 1-2 tablespoons of milk and blend until smooth.
Serve with cinnamon, you can add whipped cream.
Such eg-legs can be stored in the refrigerator for a week.

Chocolate Egg Nog Ingredients: 2 cups milk;
1 cup heavy cream (from 33%);
80 ml of rum or cognac of your choice;
6 egg yolks;
1/2 cup (110 g) brown sugar
1 teaspoon cornstarch;
1 teaspoon of vanilla extract or a pinch of vanillin;
1/2 teaspoon nutmeg;
1/2 teaspoon ground cinnamon;
100 g chopped dark chocolate (56%).
How to cook: Put the yolks, cornstarch and sugar in a bowl. Whisk well and set aside.
In a saucepan over medium heat, heat the milk with the cinnamon, nutmeg, chocolate, and vanilla. Bring the mixture almost to a boil.
Gradually add the hot milk to the beaten yolks, stirring constantly.
Then return the mixture back to the pot. Continue to simmer, stirring constantly, until egg nog thickens.
Remove from heat, add cream and ALCOHOL . Pour into a pitcher and chill.
Pour into individual serving glasses. Top with whipped cream (optional), sprinkle with cinnamon and nutmeg.

Eggless eggnog Ingredients: 1 cup cream (35%);
3 glasses of milk;
3 tablespoons of condensed milk;
1/3 teaspoon ground cinnamon;
1/2 teaspoon vanilla extract (or a pinch of vanillin)
3 tablespoons of cognac, rum or whiskey;
1/4 teaspoon ground nutmeg.
How to prepare: Add all ingredients, except alcohol, to a blender.
Beat on high speed and refrigerate.
Just before serving, take the eggnog out of the fridge and stir in the cognac.
Whip the mixture again in the blender until foam forms.
Pour 1/2 cup at a time, then carefully spoon some of the foam on top.
Garnish the drink with nutmeg and cinnamon. Serve chilled.
