
In Yekaterinburg, the Ural meat processing plant "Sibagro" held the first meat conference in the company's history. The goal is to summarize scientific and applied knowledge in the field of meat processing to improve the holding’s production processes. The event was attended by teachers from the Russian Biotechnological University (Rosbiotech), as well as the company’s partners in the production of spices and ingredients, packaging, casings for sausages, frankfurters and sausages.
The conference brought together representatives of production services of meat processing plants and pig farms, primary processing, technologists, quality managers, trade marketers, employees of commercial, logistics and other services of Sibagro enterprises.
– This is important for the development of professional competencies. We work at a meat processing plant, and each employee contributes to feeding the residents of the Ural region and Siberia with high-quality meat products. This means that everyone should know the key stages of production,

At the conference, teachers and experts gave lectures on the features of meat processing, packaging of the final product, and the biochemical processes that occur in chilled and frozen meat. An excursion to the pig farm
was organized for representatives of Rosbiotechand the Sibagro meat processing plant. They noted that the enterprise's production fully complies with modern HACCP food safety standards. The participants also tasted raw smoked and dry-cured sausages from the Ural meat processing plant and highly appreciated their taste and recipe.
– Much of what is now at the cutting edge of science is used at Sibagro meat processing plants. For example, two-stage cooling, ultra-fast freezing. In the company, we found like-minded people who are actively introducing innovative scientific achievements into practice,” emphasized Yulia Bukhteeva, Associate Professor, Candidate of Technical Sciences, Department of Technologies and Biotechnology of Meat and Meat Products of Rosbiotech.
Based on the results of the conference, the participants decided to continue the exchange of experience in the future and conduct scientific and practical events at the holding’s sites annually.
