PIONERPRODUKT.by continues to publish a series of videos from the AgroExpedition “Agriculture of Central Russia”. In this issue we will talk with farmer Sergei Balaev about his crocofarm, and also learn the secrets of preparing snails and the secrets of developing agrotourism.
On Sergei’s farm, agritourism has long been established. A large number of tourists visit the snail farm and crocodile farm, participate in master classes on cheese making and preparing a snail dish - escargot. Excursion companies book trips for the whole year. Before the pandemic there were a lot of foreigners.
Boil the snail leg 2 times for 15 minutes, changing the water between cooking times. The most common sauce for snails is called “Burgundy”, it consists of butter, dill, and SALT. This sauce seals the shell with the snail.
The cooked snail can also be frozen, and in order to eat it later, you need to place it on a baking sheet and place it in the oven at 180-200 degrees until the snail boils, after which you need to wait 3 minutes and take it out.
To keep crocodiles on Sergei’s farm, a former stable was converted. Inside the croco farm there are large heated swimming pools. This is necessary for better digestion of crocodiles. All pools are fenced with cages through which tourists can use fishing rods to feed the crocodiles. Of course, such an attraction arouses the curiosity of tourists, which in turn brings additional income .
In general, Sergey believes that the development of an agritourism destination on a farm should be the responsibility of any farmer who wants to build a successfulbusiness . This is not only additional income from excursions, but also the sale of their own products on site. For example, during the season, up to 700 tourists a day can pass through Sergei’s farm.
At the time of filming, finishing work was underway on the butterfly farm. In the large hall there will be glass cabinets , to the walls of which larvae will be attached, and butterflies will fly throughout the room. By the way, mini pools with crabs and even stands with silkworms will be installed here. In general, a real exotic corner in the Moscow region .
