
The goal of the new standard, according to information from the Ministry of Industry and Trade's press service, is to establish a legal definition of "ready-to-eat food," which will allow for clear safety requirements that take into account the specifics of raw materials, preparation technologies, and storage. In a saturated market, clear standards will help increase consumer confidence and improve quality control.
A key element of this initiative will be the development of a State Standard (GOST R 55889-2024), which will come into force on July 1, 2025. This standard will introduce mandatory HACCP food production management system (HACCP) requirements for prepared food manufacturers, ensuring product safety at all stages of production.
The introduction of the new GOST standard will simplify the work of factory kitchens and culinary establishments, increasing process transparency and product quality. Chekushov emphasized that adhering to high quality standards will allow Russian producers not only to strengthen their position in the domestic market but also to enter international markets.
The development of a new standard for prepared foods represents an important step toward improving the quality and safety of food products offered to consumers and will create the conditions for the development of a transparent and responsible production system in the Russian food service industry.
