
At the Pobeda enterprise in Yanaul, they began to produce kalyata cheese, an industrial dairy product that is used in the production of mozzarella, suluguni, and other processed cheeses and cheese products. This was announced by the HEAD of Bashkiria Radiy Khabirov.
“They plan to process 30 tons of skimmed MILK per day. At the initial stage, 1.5 tons of industrial cheese will be produced per day, after full loading - 3 tons. If things go well, investments in the project will grow,” Khabirov said.
The company plans to supply the product to Moscow, St. Petersburg and other regions where there is cheese production. According to Radiy Khabirov, there is a demand for kalyata, the company has already signed the first contracts. The amount of investment in the project is not disclosed.
Callata is a "cheesy grain", similar to large cottage cheese. it is produced from high quality fresh milk by pasteurization, fermentation with special lactic acid bacteria, protein coagulation, slicing and kneading. A little SALT is also added to the kalyata. It can be stored frozen for a long time. Consumers of the product are, among other things, restaurants that prepare fresh mozzarella from it themselves.
As RBC Ufa reported, in Bashkiria in 2022, 50 million subsidies were allocated to support the food industry. Enterprises receiving state support can allocate funds for the purchase of equipment. The amount of the subsidy in each case will be up to 40% of the cost of equipment, but not more than 5 million rubles. As of May 12, more than half of these funds have already been disbursed.
According to the Ministry of Agriculture of the Republic of Belarus, today the food industry enterprises of the republic are provided with raw materials and work stably. In January-March 2022, the index of food production in Bashkiria amounted to 109.7% (on average in RUSSIA - 103.2%). The volume of production of MEAT, meat by-products and semi-finished products, vegetable and butter, milk, pasta, bakery and confectionery products is growing in the republic.
In June 2021, the head of the Ministry of Agriculture of the Republic of Belarus, Ilshat Fazrakhmanov, spoke about plans to reduce subsidies for producers of agricultural raw materials while increasing state support for processing enterprises, that is, producers of final products. The minister explained the position of the department by the reduction of the processing industry in the republic in recent years.
