“Now to develop domestic food engineering, in fact, means to build the industry anew,” commented the Deputy DIRECTOR of the Federal Scientific Center for Food Systems. Gorbatova, technological innovation expert Stanislav Gorbatov, emphasizing that the situation in the food industry is not fundamentally different from others. The chairman of the subgroup, Tatyana Gramlikh, agreed with him, specifying that more than 90% of food engineering industries (for example, baking, brewing, SUGAR, etc.) are equipped with imported equipment, and the MEAT processing industry is no exception.

However, the situation is not so critical, adds Stanislav Gorbatov. The supply of food equipment from the EU countries is not prohibited, from Asian countries it is not interrupted. The need for some types of equipment is satisfied by domestic enterprises, including Zavod Agregat, Zavod Dva+K, Pilninsk Optical and Mechanical Plant, Russian cutter, TVS-mechanics. At the same time, as Tatyana Gramlikh clarified, the empirical experience of mechanical engineering in the Russian Federation showed that equipment is produced in small batches, and the Russian equipment manufacturer has not yet worked with large orders.

Parallel import or import substitution

Arranging a “hunt” for imports is an expert on technological innovations from the Federal Scientific Center for Food Systems named after V.I. Gorbatova sees no point. Equipment from Europe is well automated, but it is not clear whether the software will be serviced remotely. “Manufacturers from Europe cannot guarantee technical support, stable operation of software, supply of spare parts and warranty service due to the difficult market conditions,” Stanislav Gorbatov expressed his opinion. According to him, enterprises from Asia offer a huge assortment, for example, in the line of tops from CHINA there are more than 50 types of samples, however, it is practically not subject to automation.

It is necessary to develop Russian production, the organization believes, at the same time it is necessary to overcome the barrier with the lack of high-carbon steel, which is necessary for the production of individual elements necessary for the stable operation of equipment. As Stanislav Gorbatov clarifies, “there is not enough steel of the highest quality for the production of cutter knives, and for simpler equipment, like a top, equipment manufacturers are ready to work with our metallurgists.” According to the subgroup participant, Russian manufacturers have difficulties in meeting the technological quality parameter (reliability, accuracy, controllability) and the “heavy-duty” criterion (note - operation in difficult conditions) - and these are high loads on mechanisms. Such technologies are not enough.

According to another representative of the subgroup, the industry needs a centralized accounting of enterprises that produce equipment and spare parts. As the leading adviser to the Ministry of Industry and Trade, Oleg Gavrilenko, specified, the ministry is faced with the task of creating an industrial map of factories capable of providing various types of equipment and components. According to Tatyana Gramlikh, when building a map, first of all, you need to pay attention to the production of grinding equipment (cutters, tops, block cutters, emulsifiers) and cutting tools.
