Researchers of the Don State Agrarian University have created a technology and recipe for semi-finished MEAT products and sausages for gerodietic purposes. The technology of combined gero-dietary products was presented at the All-Russian competition "UMNIK-Cherkizovo 2021" by Veronika Belyaevskaya, a master student of the biotechnological faculty of the Don State Agrarian University.
Employees of the Department of Food Technologies and Commodity Science of the Don State Agrarian University used turkey meat and FLOUR from grape seeds, pea seeds and pumpkin when creating combined functional meat products. According to research results, the use of 15% flour in the recipe improves consumer properties, organoleptic characteristics and the quality of semi-finished meat products.
"The new product is intended for the full and rational nutrition of the elderly and elderly, taking into account all the requirements for gero-dietary products. Traditionally, turkey is a dietary meat due to its low fat content. Grape seeds (stones) contain a wide range of essential and biologically active substances necessary for the full functioning of the human body. The same applies to peas and pumpkins - plants are saturated with useful proteins and carbohydrates, "says Pavel Kobylyatsky, project leader, associate professor of the Department of Food Technology and Commodity Science.
