The Institute of Meat and Dairy Industry of the National Academy of Sciences will present vegetarian ice cream at Belagro

May 31, Minsk. The Institute of Meat and Dairy Industry of the National Academy of Sciences will present vegetarian ice cream and boiled sausage at Belagro, BelTA learned from the press service of the National Academy of Sciences.

"The Institute will be the first to introduce a natural, animal-free, vegetarian ice cream based on domestically produced soy milk. It is suitable for people who adhere to the principles of veganism, vegetarianism, healthy nutrition, and people with lactose intolerance. Another new development, boiled vegetarian sausage, is made from vegetable raw materials and can be used in a vegetarian diet, during fasting, as well as while following a diet," the press service said.

Among the institute's novelties is a fermented milk product with a lactose content reduced to 1%. It can be used in the daily diet of people of different ages, including those who follow a low-lactose diet after taking various medications. There is no added sugar in the composition of the product, and the sweetish taste is achieved by technological methods.

Belagro visitors will also be able to get acquainted with new meat products with reduced salt content (by 30% compared to similar products made using traditional technologies). Salty taste is achieved due to phytocompositions from vegetable raw materials, which include garlic, cumin, nutmeg, cloves, anise, ginger, white pepper. Products with a low content of table salt can be used in dietary nutrition.

“Perspective prototypes of future products will also be presented - innovative meat products based on emulsions and dry mixes from high-quality natural raw materials of animal origin, which are distinguished by their original shape, increased nutritional and biological value, improved technological performance and high consumer properties. Unique meat products of a new generation in the near future will appear in many kitchens in the future thanks to the use of 3D food printers.

More than 40 organizations of the National Academy of Sciences of Belarus will take part in the international specialized exhibition "Belagro-2021". In total, scientists and specialists of the Academy of Sciences will demonstrate over 150 innovative developments and technologies. This year the exposition will be held under the motto "Science for life. Technologies for people". It will unfold on more than 750 sq. m of open and more than 250 sq. m of indoor exhibition space. The exposition includes thematic blocks: "Biotechnologies for agriculture", "Digital farming", "Technologies and equipment for animal husbandry", "Food security".
