In Bashkiria, beef has risen in price by 10% over the year, and pork by 16%. This is evidenced by Bashstat data. If in early January the price for 1 kilogram of beef (except for boneless meat) was 357.92 rubles, for pork 248.75 rubles, then in December beef costs the inhabitants of Bashkiria 396.50 rubles, pork - 294.59 rubles.

This is higher than the inflation rate. According to the data of the National Bank of Bashkiria, in November annual inflation in the republic accelerated to 8.5% after 7.9% in October. It exceeded the all-Russian indicator (8.4%), but remained below the average in the Volga Federal District (8.7%).

— One of the consequences of the dry summer in the region was the low yield of fodder and grain crops. At the same time, there was a shortage of imported vitamin and amino acid supplements for animal husbandry due to global logistical problems. Due to the noticeably more expensive fodder base, the quality of the diet of animals has deteriorated and their number has decreased. This was the main reason for the reduction in the production of meat and milk, which led to an acceleration in the growth of prices for beef, dairy products and poultry meat, - said Almaz Gabdullin, chief economist of the economic department of the National Bank of Bashkiria.

But one of the main attributes of almost every New Year's table is jelly. In search of budget ingredients for its preparation, the townspeople traditionally go to the fair. They sell goods from their own courtyard, and sometimes, with luck, you can even agree on a discount, unlike stores where the price tag is regulated. Meat

Last weekend, many citizens rushed to New Year's fairs in search of food for the New Year's table. There is an opinion that you can buy natural farm products there at reasonable prices.

In addition to beef and pork meat, at the fair you can buy turkey, goose, offal for jelly and even a pig's head.

The price of beef meat from farmers starts from 360 per 1 kilogram. The price of pork is slightly lower - 290 rubles per kilogram. You can buy a shank for jelly from 200 rubles. A beef set for jelly will cost 200 rubles. A delicacy product - beef tongue - can be purchased for 400 rubles a kilogram.

As one of the sellers said, a popular attribute of all fairs, a pig's head, is also in great demand. The price from farmers per kilogram can vary from 80 to 120 rubles per kilogram. However, some prefer to sell such meat for a fixed price of 1,500 rubles. On average, the weight of a pig's head can reach 12-13 kilograms, and the meat from this part of the animal's body, according to the farmer, is tender and is often used to prepare meat delicacies and jelly.

Another New Year's Eve ingredient is pork legs. Their price per kilogram is 165 rubles. Beef hooves will cost a little less - only 150 rubles per 1 kg.

We also decided to compare prices for meat products in the Lenta chain supermarket. So it turned out that for a kilogram of chilled pork chop in the store, you will have to pay 389 rubles. On the card, the cost will be slightly lower - 309 rubles.

The price of frozen pork legs without a store card turned out to be lower than at the fair, and amounts to a little more than 115 rubles per 1 kg without a discount.

The cost of 1 kilogram of chilled beef in the supermarket will be a little more than 470 rubles, excluding discounts. The pulp can be purchased for 610 rubles per kilogram, excluding discounts. However, a chain store may not always have a rich assortment of semi-finished meat products, and prices may change.

Tatiana, a cook with 10 years of experience, told UFA1.RU how to determine quality meat.

- My opinion is that buying food at the fair in winter is like pointing a finger at the sky. As a rule, the products are brought there already frozen and it is impossible to smell the spoiled meat. You can focus on color, but even in this case it will not be an indicator of quality. If the meat is dark or brown in color, it may be either old or simply an indication that the animal was fed a lot of beets. It is better to buy chilled meat in a store or in a covered market. There you can fully inspect the product, evaluate the smell and overall quality,” the woman said.

Bird

The choice of birds at the fair was rich. You can buy duck, goose and turkey from farmers.

The cost of a goose carcass from sellers varies from 450 to 550 rubles per 1 kilogram. The duck will cost a little cheaper - from 350 rubles. Some entrepreneurs are even ready to give away a three-kilogram carcass of a goose for 1,500 rubles.

Goose paws and heads for cooking delicacies can be bought from 200 rubles per kilo.

At the New Year's fair at VDNKh, prices are slightly lower. The price for a kilogram of goose from a farmer there was 490 rubles.

The price per kilogram of turkey will be 400 rubles. At the fair, you can buy both the whole carcass and its part. The price will remain the same. The cost at the fair at VDNKh was a little more expensive - 440 rubles per 1 kilogram.

The price per kilogram of a frozen goose carcass in Lenta will be 589.49. The assortment of the supermarket turned out to be not so large and it was not possible to find a duck and a turkey on the store's website.

In the assortment of the presented goods, you can buy turkey fillet at a price of a little more than 442 rubles.

Bashstat does not keep statistics on prices for geese, ducks and turkeys.

- When choosing a bird, you need, as in the case of meat, to focus on the absence of an unpleasant odor. Also, the skin of a goose, duck or turkey should be a healthy pink color. If bruises are observed on the carcass, this may indicate that the bird was slaughtered incorrectly, ”cook Tatyana advised.
