Restaurateur Mironov commented on the reasons for the rise in meat prices in Russia

According to NTech, pork belly prices have increased by almost 50% over the past year. Although the most significant growth was observed in September-October 2024 , the cost of this product has now begun to gradually decrease. A similar situation has developed with chicken breast and fillet, which have become more expensive, but in late January - early February their prices also began to decline. However, chicken wings continue to rise in price, increasing in price by 5-10 rubles every week.

Sergey Mironov, restaurateur and chairman of the coordinating council of the Federation of Restaurateurs and Hoteliers of the Russian Federation, commented on the current situation in an interview. He expressed doubts about the accuracy of NTech's data on pork belly, suggesting additional checks. However, he was not surprised by the rise in chicken prices.

Mironov identified several key factors influencing the rise in MEAT prices. In conditions of labor shortage, wages are rising, as well as costs for feed and production. In addition, the high key rate forces producers to repay loans, which also affects the final cost of products.

The restaurateur paid special attention to the dynamics of prices for chicken wings, which are rising in price faster than other products. In his opinion, this is due to the active use of wings in fast food chains, where they are often deep-fried.
