“2021 led to the degradation of the industry”: results of the year for the restaurant market

The outgoing year was not as difficult for catering as 2020. But the problems of the market have turned into long-term ones: kiosks with shawarma are crowding restaurants, the shortage of personnel is becoming more acute, and delivery has not learned to pay for itself.

Last year was a serious test for the catering market. According to the report "Forecast of the Catering Market 2021-2022" prepared by "RBC Market Research", its volume in RUSSIA in 2020 fell by 22.6%, to 1.44 trillion rubles. From March 2021, a gradual improvement began, but the second half of the year proved unstable. In the summer, a system of QR codes was introduced in Moscow and the Moscow region and the work of restaurants and cafes was limited at night. According to Viktor Yevtukhov, Deputy HEAD of the Ministry of Industry and Trade of Russia, the drop in revenue in restaurants without summer terraces during the operation of this system amounted to 60-85%. Later, QR codes were introduced in other regions. At the end of October - beginning of November 2021, a new lockdown was announced in Russia, during which catering could only work for delivery and pickup.

The structure of the market has changed: chain restaurants, especially fast food, coffee houses, bars and cafes, have been better adapted to the new conditions. The number of such outlets from September 2020 to September 2021 increased by more than 700. Democracy and good adaptability to delivery and takeaway have affected. According to RBC Market Research, by the end of 2021, the industry's turnover will grow by 18.4%, to 1.7 trillion rubles. RBC asked the players to take stock of the year.
